First Lady Michelle Obama announced her “Let’s Move!” campaign earlier this year to aggressively target causes of childhood obesity. The campaign highlights healthy food choices, healthier schools, physical activity, and accessible, affordable and healthy food for all. As a follow-up to this initiative, the USDA’s Economic Research Service has developed a comprehensive on-line tool called Your Food Environment Atlas. The tool allows users to gather regional information on factors that affect access to healthy and affordable food.
The Atlas contains county-level information about three broad categories: food choices, health and well-being, and community characteristics. Using these categories, it is possible to identify possible “Food Deserts,” which are areas where low-income residents do not have ready access to well-stocked grocery stores. Some low-income rural families live over ten miles from a grocery store. This lack of access is one of the many factors leading to poor nutrition in low-income areas.
The USDA and the Obama Administration are just starting to take on the issue of Food Deserts. The hope is with better access to healthy food, it will be easier for low-income families to maintain a healthy lifestyle.

SCFS Warehouse Gets a Makeover!
Earlier this month, a team of National Civilian Community Corps (NCCC) Americorps volunteers worked for four days in the Warehouse. They rearranged the second floor storage areas, cleaned, painted, patched holes and did other much-needed maintenance. With a cleaner and more organized space, we can better move food in and out to you. Thanks NCCC for all the hard work!
Cooking Demo Reminder
Three LAs (Coos Bay SDA, Bandon Good Neighbors, and Bandon Restoration Worship Center) have signed up to have Cooking Demonstrations at their sites. It’s not too late for you to sign up as well!
In these demos, educators from OSU Extension will cook a few recipes with your volunteers, and then make samples and copies of the recipe available to volunteers and to your clients.
This is a great way to get ideas for how to use items that people have trouble with – for example green beans, tofu, or dried beans.
To sign your site up, send an email to Mariah at mpepper (at) orcca (dot)us with what day/time is best for you. She will put you in touch with the folks at OSU Extension to schedule the demo.
Breaded Tofu Strips
Serves: 4
Ingredients:
14 ounces tofu, drained
1 cup flour
1/2 cup Italian dressing
1 cup breadcrumbs
1 cup canola oil
Instructions:
- Preheat oil in skillet on medium to high heat.
- Slice tofu into strips.
- Dredge strips into flour making sure to shake off excess. Dip into Italian dressing (just like what you eat on your salads), then coat with bread crumbs. To make even more crispy, dip into dressing then bread crumbs again.
- Place strips into your preheated skillet. Cook until bottom turns a nice brown then flip and repeat.
- Serve with ranch, ketchup, or your favorite dip!
