Network Meeting
It’s that time again! The South Coast Food Share Network Meeting is happening:
  • February 17th, 2010
  • The meeting is being held at the Langlois Food Pantry at 94282 Hwy 101 S. Langlois, OR.
  • Potluck at 11:30 and then the meeting proper at Noon.

Edamame
Edamame is a green vegetable, harvested at the peak of ripening right before it reaches the "hardening" time. The word Edamame means "Beans on Branches," and it grows in clusters on bushy branches. To retain the freshness and its natural flavor, it is parboiled and quick-frozen. In East Asia, Edamame has been used for over two thousand years as a major source of protein. Edamame is consumed as a snack, a vegetable dish, used in soups or processed into sweets. As a snack, the pods are lightly boiled in salted water, and then the seeds are squeezed directly from the pods into the mouth with the fingers.

Roasted Edamame

Ingredients:

  • 2 teaspoons olive or vegetable oil
  • 1/4 teaspoon dried basil, crushed
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon onion salt
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon paprika
  • 1/8 teaspoon black pepper
  • 1 package (10 ounce size) edamame
  • Preheat oven to 375 degrees F.


In small bowl, stir together oil, basil, chili powder, onion salt, cumin, paprika and black pepper. Drizzle mixture over edamame and toss to coat well. Arrange beans in a single layer in a shallow baking dish. Roast, uncovered, for 12 to 15 minutes, stirring once, until edamame begin to brown. Serve hot as a vegetable side dish or cooled as a snack. Refrigerate any leftovers.

Garlic Teriyaki Edamame
Ingredients:

  • 1/4 cup water
  • 3 cloves garlic, minced
  • 1 (16 ounce) package frozen edamame in the pod
  • 1/4 cup teriyaki sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons sesame seeds

Bring the water and garlic to a boil in a saucepan over high heat. Stir in the edamame, and cook until the edamame are hot, and the liquid has nearly evaporated, about 5 minutes. Reduce the heat to medium-high and stir in the teriyaki sauce, brown sugar, vinegar, and sesame oil. Stir constantly until the sauce has thickened and coats the edamame, about 4 minutes. Sprinkle with sesame seeds to serve.

Q: Do I need to use any kind of fancy, antibacterial soap when washing my hands?
A: No, plain soap and water will work fine to get rid of germs. There’s no need to spend any extra money on fancy soaps.

Volunteer Thanks
South Coast Food Share would like to take this moment to thank the Key Club of North Bend High School for their volunteer work. On the recent in-service day, when the students had the day off, the Key Club chose to use their time coming to volunteer at the South Coast Food Share Warehouse. While there they sorted donated food, packed food boxes and helped clean the warehouse. To these students, who place such a value on community support, we at the South Coast Food Share would like to give our heartfelt thanks.

Upcoming Food Drives
DHS food drive runs through Saturday!

Kicking off the Governor’s State Employee Food Drive on the South Coast, the Department of Human Services will sponsor a food drive at several local grocery stores throughout the first week of February.

Local community members can simply contribute to South Coast Food Share donation barrels at Wal-Mart Super center, Albertsons Grocery and McKay’s Fresh mart on Seventh Street, throughout the first week of February.   On Saturday, Feb. 6, DHS staff will encourage community donations at each participating store and share information about hunger and services, from 10 a.m. to 2 p.m.

Dutch Love event offers coffee for cans of food!
On Sunday, Feb. 14, all three Bay Area Dutch Bros. Coffee Stores will collect cans or boxed items of food for South Coast Food Share and provide free coffee to donors in honor of the statewide Dutch Love food drive.  The community can help support hungry families in Coos County by donating to the annual Dutch Love food drive in Coos Bay and North Bend!
Community members can receive a free coffee at any Dutch Bros. Coffee Store in the Bay Area on Sunday, Feb. 14, by donating three canned or boxed food items to feed hungry families.  All donations will be provided to local food pantries and meal sites to feed our hungry neighbors.
